The coffee is derived from the seed of an evergreen plant of the family Rubiacee. This plant grows in Asia, America and Africa and has two main species:

- The Coffea arabica: cover 75% of world production and the caffeine content in seeds is lower than that of other species. This species can be found in: Asia, Africa, Brazil, Colombia, Ecuador, Peru.

- The Coffea robusta: characterized by small round seeds, but rich in caffeine. It grows mainly in Brazil, Indonesia, Africa.
